Empanadas

Tonight I tried empanadas for the very first time.  I think they turned out quite well!  Here's my version of a empanadas recipe if you would like to try this in your kitchen.

1 lb. ground sausage
1 large carrot (diced)
2 celery stalks (diced)
1 jalapenos (diced)
1/2 medium onion (chopped)
1 TB flour
2 eggs (separated)
1/2 tsp salt 
1/4 tsp pepper
1/4 garlic salt
1/2 tsp cumin
2 homemade refrigerated pie crusts or store bought is fine.

Saute onion, carrots, and celery in large sauce pan.  Add sausage and jalapenos and cook til brown.  Combine seasonings and sprinkle over mixture.  Stir.  Sprinkle flour and stir.  When flour is mixed in add 2 egg yolks and stir quickly.  Let thicken while you prepare dough.  

Roll dough out on floured surface.  Place a cereal bowl upside down on dough and cut around with a knife.   Do this until all dough has been cut.  Add 1/3 meat mixture to middle of each circle.  Use egg whites to seal and fold dough in half.  Crimp with a fork.  When all are filled baste tops with remaining egg whites and place in oven at 350 for 20 minutes or until brown.
