Meatloaf and Mashed Potatoes

So these are meatloaf cupcakes and what we had for dinner last night.  They are so cute and yummy!  The frosting (mash) is the BEST!

Meatloaf
1 lb ground beef
1 egg
1/2 cup bread crumbs
salt/pepper
1 tsp garlic salt

Mash
4 russet potatoes (cut into chunks)
2 carrots (cut into chunks)
1/4 cup butter
a splash of milk
salt/pepper
1 tsp garlic salt

For meatloaf, mix all ingredients in large bowl.  Place a little larger than a golf ball size ball into cupcake tins.  Press mixture down and bake at 350 for 30 minutes or until cooked through.  Drain off grease and let sit on plate.

For mash, place chunks in pot of water.  Boil til soft.  Drain water and place potato and carrots in mixing bowl.  Mix all other ingredients in bowl. Spoon mixture into sandwich bag and cut tip.  Use as a pastry bag and frost the meatloaf cupcakes.  

Your kids will love them, mine do!!  Hubby's too!
