Peach Pumpkin Butter

1 Can of Peaches in Light Syrup (14oz.) or 5-7 Peaches
1 Cup Pumpkin Puree
2 Cups of Sugar
2 tsp Cinnamon
1/2 tsp Ginger

Place Peaches in a blender (if using real peaches, remove pits) and puree.  Place all of the ingredients in slow cooker, cover with jar cracked a little and set to low.  Cook for 3 hours.  Set to high and cook for another hour.  Ladle in to clean jars and keep in refrigerator or freezer.  Serve on biscuits or homemade bread!

Ooey Gooey Lemon Bars

Crust:
1 cup margarine
1/2 cup powdered sugar
1/2 tsp salt
2 cups flour

Filling:
4 eggs (slightly beaten)
2 cups sugar
1/2 tsp baking powder
1/4 cup flour
1/4 cup lemon juice

Cream butter and sugar.  Add and mix the remaining ingredients for the crust.  Pat into a greased 13 X 9 baking pan.  Bake at 350 for 15-20 minutes.  

In the meantime prepare the filling mixture. 

Pour filling mixture over hot crust and place back into oven for 20-25 minutes.  Remove from oven and sprinkle with powdered sugar.  Serve after completely cooling.

Thumbprint Cookies with Home Made Jam!

1/4 cup soft shortening
1/4 cup soft butter
1/4 cup brown sugar
1 egg yolk
1/2 tsp vanilla
1 cup sifted flour
1/4 tsp salt

Cream together first 3 ingredients.  Add the remaining ingredients.  Take the dough mixture and roll into individual balls the size of a walnut.  Bake on cookie sheet for 5 minutes at 350.  Remove from oven and using the back of a spoon, make an indention in the center of the cookie.  Place back into the oven for 8 more minutes.  Let completely cool.  Spoon some of your own home made jam.  I used my strawberry!  Send me your pics with YOUR jam!

Chewy Oatmeal Raisin Granola Bars

  • 4 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 2/3 cup butter, softened
  • 1/2 cup honey
  • 1/3 cup packed brown sugar
  • 1/2 cup raisins

Mix all ingredients in large bowl.  Press into a buttered 13 X 9 pan.  Bake at 325 for 20 minutes.  Cut into bars using a pizza cutter.  Let cool completely before removing from pan.  When cool remove and package individually in snack bags.

Oatmeal Raisin Cookies!

  • 3/4 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 teaspoon salt
  • 2 3/4 cups rolled oats
  • 1 cup raisins

Cream sugars and butter til smooth.  Add egg and vanilla.  In a separate bowl combine dry ingredients excluding  oats and raisins.  Gradually add flour mixture to wet ingredients.  Mix well.  Stir in oats and raisins. Roll batter in hand smaller than a golf ball and place on cookie sheet (it makes them a more round cookie.  Bake at 375 for 8-10 minutes.

So this is a Malaysian recipe called Jemput-Jemput Pisang.  Its basically fried mashed bananas balls.

4 ripe mashed bananas
1 cup sugar
3 cups flour
2 tsp baking powder
1 tsp vanilla
1/4 tsp nutmeg
1/2 tsp cinnamon
oil for frying

Combine all ingredients (except oil of course) so they are mixed well. Heat oil and test with water.  When oil snaps at you, its ready!  Drop half spoonfuls of mixture in oil using spoons sitting in water.  It may not look like much on the spoon, but the dough will expand while frying.  Fry til golden brown and sprinkle with powder sugar!!

My brother told me to the other day that I need to post more pictures with my recipes. So, here is my banana bread.

1 3/4 Cups sifted flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1/4 teaspoon fresh nutmeg
1/2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs (well beaten)
1 cup mashed bananas (2 or 3 bananas)


Sift together dry ingredients in separate bowl. In mixing bowl cream shortening, gradually add sugar until light and fluffy. Add the eggs and beat well. Alternately add flour mixture and bananas. Beat until smooth and creamy. Pour into greased loaf pan and bake 1 hour at 350. Remove from oven and turn out to cool on kitchen towel.

Yields: 1 loaf

Spiced Cheerios Bars

1/2 cup honey
1/2 sugar
1/2 peanut butter
5 cups of Honey Nut Cherrios
1/2 container of vanilla frosting
1/4 cup crushed Honey Nut Cherrios
1/4 tsp cinnamon
1/4 tsp nutmeg

In saucepan bring honey and sugar to a boil.  Add peanut butter until melted.  Cover 5 cups of cherrios with mixture and spread into buttered 13 X 9 pan.  Place in fridge for 30 minutes.  

Mix vanilla frosting with spices and spread on cooled bars.  Top with crushed cherrios, cut into squares, wrap individually with plastic wrap and place in air tight container.
