Jalapeno Poppers

Chorizo and Cheese Stuffed Jalapeno Poppers!

15 jalapenos
1 pkg of pork chorizo
1 pkg of cream cheese
2 cups of shredded cheddar cheese
2 cups seasoned bread crumbs (I make my own)
1 cup of flour
1 cup of milk
1 egg
oil
Start out by getting a pot of water boiling on the stove.  Cook your chorizo and place in freezer to cool it down quickly.  Prep your jalapenos.  *MAKE SURE YOU WEAR GLOVES*.  The oils from the jalapenos  are very potent.  Cut the tops off the peppers, slice long wise and gut insides.  Get a bowl of ice water and check the water on the stove.  If its boiling, place all of the peppers inside.  Cook until water boils again.  Remove from heat, drain and place inside ice water bath.  This is called blanching.  It's a way to stop the cooking process.  Transfer to a pan to dry.

When they're dry its time to take the chorizo out of the freezer (15 minutes).  Add chorizo and cheeses to your mixer and mix away.  
Now, its time to start scooping. Use your hands, its easier.  Scoop some mixture into each half of pepper.  Let dry about 5 minutes.  Combine egg and milk in one bowl and have the bread/flour mixture in another.  Dip in the wet mixture and then the dry mixture.  At that point you should be able to start frying them up. What?  You didn't heat your oil yet?  You should have really read through this entire recipes before attempting it.  Go ahead, I'll wait....doot ta doo! Ready?  Ok...
Fry for 1 to 1 1/2 minutes.  EAT RIGHT AWAY!!
