Salmon and No Worry Garlic Mashed Potatoes

Salmon

Salmon or any fish (no skin)
2 TB Lemon Juice
1/4 Cup Chopped Cliantro
1 Sprig of Rosemary
Sprinkle of crushed Red Pepper Flakes
6 Cloves of Garlic (Minced)
Pinch of Salt
Dash of Pepper

Place fish in serving size pieces in a large casserole dish. Add above ingredients one at a time over top of all fish. Cover with foil and bake in oven at 375 degrees for 45 mins. or until cooked through.

No Worry Garlic Mashed Potatoes

Ok, so this needs to be said.  Everyone thinks potatoes are bad for you.  Especially if you're dieting or staying away from carbs.  Potatoes are full of Potassium and are just as healthy as brown rice.  Well the only reason potatoes get a bad rap is because of the items you add to it.  Baked potatoes are covered with cheese, sour cream, butter.....french fries are fried....mashed potatoes combined with cream and loads of butter.  This dish has ZERO butter.

Garlic Mashed Potatoes

5 Large Gold Potatoes
8 Cloves of Minced or Chopped Garlic
2 TB of Non Fat Milk
Pinch of Salt
Dash of Pepper

Cut Potatoes with skin on into cubes.  Add to a large pot and boil until tender.  Drain.  Add to a mixer and combine with the rest of the ingredients.  Serve immediately.
